Sweet Curried Beef

This is definitely a dish after my own heart. I’m quite a big fan of curries, although I do go for the mild ones rather than authentic curry recipes which are usually a bit too fiery for my own taste. So my curries tend to be exactly that: my own version of classic recipes, but equally delicious. You can, of course, add some more spice if you don’t mind the heat.

Ingredients

  • 1 apple, diced
  • 1 onion, diced
  • 1 tomato, diced
  • 2 tablespoons butter
  • 1/2 tablespoon Keen’s Curry Powder
  • 500g diced beef
  • 1 tablespoon chutney
  • 1 tablespoon jam (optional)
  • 1 tablespoon sultanas
  • 1 tablespoon raw sugar
  • 1 banana (optional)
  • 2 tablespoons desiccated coconut (optional)
  • 1 tablespoon lemon juice
  • Salt, to taste
  • Coconut milk (optional)

Method.

  • Step 1
    Place apple, onion and tomato in saucepan with butter and curry powder. Fry without browning for 10 minutes.
  • Step 2
    Add meat to the saucepan with chutney, jam, sultanas, sugar, sliced banana and coconut. Simmer very gently for about an hour or till meat is very tender.
  • Step 3
    Half an hour before serving add lemon juice and salt.
  • Step 4
    Serve with boiled rice and lemon wedges and cucumber sliced in yoghurt or Tzatziki.
