Sweet Curried Beef
This is definitely a dish after my own heart. I’m quite a big fan of curries, although I do go for the mild ones rather than authentic curry recipes which are usually a bit too fiery for my own taste. So my curries tend to be exactly that: my own version of classic recipes, but equally delicious. You can, of course, add some more spice if you don’t mind the heat.
Ingredients
- 1 apple, diced
- 1 onion, diced
- 1 tomato, diced
- 2 tablespoons butter
- 1/2 tablespoon Keen’s Curry Powder
- 500g diced beef
- 1 tablespoon chutney
- 1 tablespoon jam (optional)
- 1 tablespoon sultanas
- 1 tablespoon raw sugar
- 1 banana (optional)
- 2 tablespoons desiccated coconut (optional)
- 1 tablespoon lemon juice
- Salt, to taste
- Coconut milk (optional)
Method.
- Step 1Place apple, onion and tomato in saucepan with butter and curry powder. Fry without browning for 10 minutes.
- Step 2Add meat to the saucepan with chutney, jam, sultanas, sugar, sliced banana and coconut. Simmer very gently for about an hour or till meat is very tender.
- Step 3Half an hour before serving add lemon juice and salt.
- Step 4Serve with boiled rice and lemon wedges and cucumber sliced in yoghurt or Tzatziki.
